Summer fruits galettes

    Summer fruits galettes is the perfect summer recipe, a delicious desert with buttery crust and lovely berries.

    I will be honest: you start this recipe and after some hours you will see the results. And that’s because the butter crust needs to rest for a couple of hours before creating the galettes and then baking them. So when I made this recipe, my husband kept asking me every 20 minutes if the galettes are ready. So if you intend on doing this recipe don’t tell anyone!

    I decided to do summer fruit galettes with butter pie crust dough because berries in a buttery crust taste divine. There is nothing buttery that I don’t love, but these are now my favorite dessert.

    What are galettes

    Galettes are free-form tarts that resemble tarts, but the process of making them is not so elaborated. When making galettes, you need a pie crust like lard dough, butter dough, or the vegan version of coconut fat dough. You roll the dough flat and then make circles of dough. Another option is to take balls of dough and roll them individually in a circle.

    Then, a delicious filling will complete your recipe. You can use both savory and sweet fillings. This is our recipe that uses strawberries, blueberries, and raspberries, but you can use any type of fruits.

    How to make the filling

    Although you could use just fruits for the recipe, I find that with a little sugar and cornstarch you will get richer in texture filling and the galettes are delicious. Mix 2 cups of fresh berries with 2 tablespoons of sugar and 2 tablespoons of cornstarch. To get that gelatin consistency, I cut the strawberries in small pieces. The juices from the fruits with cornstarch and sugar transform into a marmalade inside the dough. Place the filling in the freezer until you are ready to use it.

    Making the butter crust

    Follow our recipe to make the butter crust or use your preferred crust. Roll the dough and cut circles out of it. I do this by using a bowl since I don’t have such a big cookie cutter. You can make them as big or as small as you would like.

    Shaping the summer fruits galettes

    There is no right or wrong way of shaping your galettes. Place two teaspoons of filling on each dough circle, making sure you don’t use too much filling.

    Wrap the edges of the galettes on top of the filling. You can either pinch the edges and create some sort or ruffles, or just gather all the dough and press them, or simply cut the excess and fold it on top of the filling.

    After you have your galettes, put them in the freezer for 10-15 minutes before baking, to make sure they keep their form.

    Before baking, you can brush with a little egg wash and sprinkle sugar on the dough. Also, you can add pistachio on top of them. I forgot about the pistachio and I add it after about 5 minutes after putting the galettes in the oven.

    And now, for 20-25 minutes you can watch them bake. I love watching stuff baking. Make sure to leave enough room on the tray between the galettes, because they will expand.

    You can make ahead both the filling and the dough and keep them in the refrigerator for up to two days. After baking, you need to let them cool for a couple of hours before storing them in the refrigerator. They will last 4 days wrapped in foil or in a closed casserole. My galettes disappeared on the same day.

    Ingredients for the filling

    • 1 cup sliced strawberries
    • 1/2 cup blueberries
    • 1/2 cup raspberries
    • 2 spoons cornstarch
    • 2 spoons sugar
    • 1 tsp vanilla essence

    Ingredients for butter dough

    • 320 g flour (2 and 1/2 cups)
    • 250 g butter  (1 cup)
    • 120 ml water (1/2 cups)


    1. In a bowl mix strawberries, blueberries, and raspberries with 2 tbsp of sugar and 2 tbsp of cornstarch and let them cool in the fridge until you will use them.
    2. Prepare the crust dough: measure your flour and add cold butter, cut in small pieces. Mix the flour with the butter until you get a crumble mix and the butter is completely covered in flour. Add a little bit of water at a time and mix well until you get a ball of dough. You might not need to add the whole flour, depending on how dry your flour is. It is better to add the water a little at a time and see if you need more. Knead the dough a little, wrap it in plastic foil and refrigerate for two hours before using.
    3. After 2 hours remove the dough from the fridge and let it rest for 15 minutes. Using a rolling pin, roll the dough and cut circles with a big mug or a bowl.
    4. Place 1 spoon of the filling in the center of each circle of dough.
    5. Gather the sides of the dough in the center, like in the video.
    6. If you want, you can add pieces of fruits on top, but you don't have to, you already have fruits in the filling.
    7. Place the galettes on a baking sheet and in a tray and bake for 25-30 minutes at 200 degrees C (392 F), until they get golden brown.


    Optional - you can add pistachio, it gives a nice taste.
