Fried zucchini in an egg crust is a popular dish during summer in pretty much the whole world. Some use bread crumbs, some use cheese, but now I will show you the easiest recipe.
There are numerous recipes with fried zucchini in an egg batter, but this one is the simplest. You only need zucchini, eggs, flour, and salt/pepper.
They are good cold or warm and it only takes 30 minutes to make (more or less).

When I was a child, my grandmother would always make this fried zucchini in an egg crust. I remember I would always refuse to eat them. Then, one day we were on vacation in the mountains, and we went with some locals to pick blueberries.
It was raining, and we spend a lot of time picking blueberries in a beautiful valley. Everything was very exciting and new for me. We were even using the special combs they have. I don’t remember much, but I think I was spending more time eating and chasing my dog than actually working.

When it came time to take lunch, one of the ladies had fried zucchini in an egg batter. She insisted I also eat some of her zucchini, and I did. When I tell you they were delicious! I was in disbelief. How is it possible to use the same recipe and to get such a different taste?
I think that was the day I understood the power of a great recipe. It comes with detailed instructions. Do you want to know what was the difference between what this lady made and what my grandmother was doing? It was all about how thin she sliced the zucchini. They were so slim that you could feel more the taste of the eggs than the taste of the zucchini. And the texture of the zucchini that I disliked was not there anymore.
So, long story short, these are the lessons I’ve learned that day that are related to this recipe:
- If you want to make fried zucchini, make them super-thin.
- Food tastes better when you’re working for it.
- Fried zucchini tastes better cold.

If I made you curious, here is how I make this simple recipe. Take on zucchini and slice it very thin. Place the slices on a paper towel and salt them. Let them rest for 10-15 minutes, and then pat them dry. This step is mandatory because it will draw out the excess from the zucchini.

Then take two bowls, in one you put some flour, in the other one some eggs. Beat the eggs and add salt and pepper.



Heat a pot with vegetable oil. Take one slice of zucchini and dip it in flour, then in the egg. Fry them on both sides in the hot oil.

Once they are golden, remove them from the hot oil and put them on paper towels.

You can serve them with different types of sauces and dips. One of our favorite recipes is garlic sauce, similar to the Lebanese Toum, but only with garlic, salt and oil.

Fried zucchini in an egg crust is a popular dish during summer. Try this yummy recipe, paired with your favorite dip sauce.
Ingredients
- 2 zucchini
- 2 cups flour
- 4 eggs
- salt
- pepper
Instructions
- Wash and slice the zucchini as thin as you can (1/4 inch, or 3mm)
- Salt them and place them on paper towels.
- Let them sit for 10-15 minutes, to make sure the salt removes the water from the zucchini.
- Place the flour in a bowl.
- In another bowl add the eggs and beat them very well.
- Then, add salt and pepper to the eggs.
- Add vegetable oil to a pan and heat it.
- Take one slice of zucchini, dip it in the egg mix and then coat it with flour on both sides.
- Then, add it to the hot oil. To the same with the others.
- Fry them until golden.
- Remove them from the oil and place them on a paper towel to remove excess oil.
- Serve them with your favorite dip sauce,
