We like some nice roasted pork. This time I decided to do a roasted pork shank. Usually, we do it with beans, but I wanted something fast and delicious. In addition, I thought that some colors on the plate will also be nice.
For the pork shank, I picked up the frozen mini pork shank. It was the only one which was smoked. Not to the extent that I like or am used to, but it was fine. Mine was already mixed with condiments. Otherwise, I would rub it with some olive oil and a mix of paprika, salt, and pepper.
For the side dish, I used potatoes. I wanted to add some color to the plate so I used purple potatoes and sweet potatoes. To complete the meal, I bought also some tomatoes and Mache salad.

The cooking process is pretty straightforward. The pork should be rubbed with spices. You can add hot paprika to the condiment mix if you want it hotter. Rub the pork and place it in a tray in a vertical position (do not place it on one side). This way it will cook uniform. The potatoes can be cut into chunks. Here, you can use your favorite recipe for baked potatoes. I like mine simple. I add the chunks into a mixing bowl and mix them with some olive oil, salt, and pepper. Then, off they go to the baking tray, near the pork shank.

The cooking time is 40 minutes at 200 degrees Celsius. It’s the perfect time to take care of the salad. Wash the tomatoes and the Mache salad under running water and use a salad spinner if available, to remove the excess water. Add the salad into a bowl together with the sliced tomatoes. Add olive oil, salt, and pepper and mix. On top of the salad add some thick balsamic vinegar. If you liked this, try also our Lamb Chops recipe.

Roasted Mini Pork Shank
Delicious mini pork shank with a mix of colorful sweet and purple potatoes. The recipe is simple so you can not go wrong with it. The side dish will bring some colour, making this recipe more appetizing.
Ingredients
Roasted Pork Shank
- mini pork shank (smoked) - 2 pcs.
- purple potatoes - 4 pcs.
- sweet potatoes - 2 pcs.
- paprika - 1tbs.
- olive oil - 2 tsp.
Salad
- Mache salad
- Olive oil - 1tsp.
- Reduction of Balsamic vinegar di Modena - 1tsp.
- Cherry tomatoes
Instructions
Roasted Mini Pork Shank:
- Unfreeze the pork shanks, if you use frozen ones.
- Rub the pork shank with paprika (hot paprika, if you want it hot). Season it with salt and pepper.
- Peel the potatoes and wash them. Cut the potatoes into chunks and add them into a mixing bowl.
- Add olive oil and season the potatoes with salt and pepper. Mix with the oil and then add the potatoes into a baking tray.
- Add the pork shanks into the same baking tray, in vertical position. Do not place them on one side, so they will cook uniform.
- Add the tray into a preheated oven at 200 degrees Celsius (392 F) for 40 minutes. Stir the potatoes after 20 minutes.
Salad:
- Wash under running water the Mache salad and the tomatoes.
- Use a salad spinner to remove the excess water.
- Slice the cherry tomatoes into half.
- In a bowl add the salad and the cherry tomatoes. Add the olive oil and season with salt and pepper. Mix the ingredients.
- Add balsamic vinegar reduction on top of the salad.
- Serve it together with the pork shank.
Notes
The rub condiments for the pork shank can be varied depending on your preferences. If the pork shank is not smoked, I recommend to use smoked paprika. If your shanks are already seasoned, then skip the rubbing step.
