Savory quiche with lard dough is a recipe that is very easy to make. These quiche melt in your mouth, literally. The combination of flaky crust, eggs, and toppings is a crowd-pleaser.
For this recipe we used the lard dough, although you could use any other quiche dough you want. I love making hot water dough more than I enjoy making the butter one. You can also freeze this batter and use it another time.
The mini quiche looks lovely and bakes faster than a whole quiche. This recipe is a slight variation that requires only eggs and some toppings of your choice.
We made 4 types of toppings:
Topping filling 1. Salmon with spinach and parmesan.
Topping filling 2. Hard cheese, tomatoes and spinach.
Topping filling 3. Smoked salmon with Gouda cheese.
Topping filling 4. Hard cheese and tomatoes.
We baked these mini quiches in a 12 piece muffin pan, and one of them disappeared before I got the chance of photographing them. Savory quiche with lard dough is delicious warm, but you can also serve them cold, as an appetizer. We do recommend eating them warm, if possible.
