Cheese and dill pie

Cheese and dill pie is one of the recipes I invented when I craved lots of cheese, and I had some pie crust to spare. But let me tell you it was a hit! It was deliciously warm and cold when we ate the leftovers on the second day.

This pie is rich in cheese and also has the goodness of bell peppers, mushrooms, and smoked salmon. If you want, you can skip salmon altogether; you will still get a delicious pie.

Prepare the cheese and dill pie

For cheese and dill pie, I used a piece of lard dough; you can find the recipe here.

After I made the dough and left it to chill a little, I transferred the dough to a well-floured surface and using a rolling pin, I made a big circle, enough to cover my pie tray and the edges.

I made the cheese mix and added the bell pepper, mushrooms, and sliced smoked salmon. I placed the mix in the pan and baked it at 200 degrees for 30 minutes.

I could not wait to chill a little so that I can cut it. We kept the whole pie in the dining room, and we ate piece after piece; it was that good.

This savory cheese and dill pie is perfect for a light dinner. Add some vegetables of your choice and you have a quick and healthy meal that you can serve warm or cold.

Ingredients

  • 1 Lard Dough
  • 200 g Hard Cheese (2 cups)
  • 150 g Gratin Cheese (1,5 cups)
  • 200 g Fresh Cheese (2 cups)
  • 100 ml Cooking Cream (1/2 cups)
  • 2 Eggs
  • 100 g Smoked Salmon ( 4 slices)
  • 10 Cherry Tomatoes
  • ¼ Bell Pepper
  • 5 Mushrooms
  • Dill

Instructions

  1. Roll the dough and place it in a special shallow pie
    pan.
  2. Grate the hard cheese and mix it with fresh cheese,
    gratin cheese, eggs and cooking cream. Add dill and mix until combined.
  3. Incorporate sliced mushrooms and smoked salmon.
  4. Pour the mix into the baking tray and decorate with
    sliced bell pepper and tomatoes.
  5. Cook for 40 Minutes at 200 degrees C (392 F). Remove it
    from the oven and let it cool a little before cutting.
  6. Serve it warm or cold, with a glass of buttermilk or
    ayran.
