Chicken and Brown Butter Sauce with Capers

Chicken and brown butter sauce it’s an excellent light dinner and pairs very well with capers and your preferred vegetables. We made this recipe with broccoli and cauliflower, but you can serve other vegetables.

Although this is a very easy recipe, I actually made it in 4 steps:

  1. The first step is making the brown butter. You can use our recipe, or any other recipe you would like.
  2. The second step is baking the chicken. You can also cook it in a pan on the stove, just make sure it is cooked completely.
  3. The third step is steaming the vegetables.
  4. The fourth step is cooking the dish. To be honest, everything is already cooked, you just add the flavour.

How to make brown butter

Making brown butter is extremely simple: you just need fat butter and a pan. Place the amount of butter you would like to brown in a pan and set the stove to medium heat. Let the butter on the stove for 10-12 minutes, until the butter turns golden and the white pieces of milk turn dark brown. When you get this lovely color, remove the butter from the stove and get ready for the next steps.

How to cook chicken

You can make the chicken in two ways: in a pan or in the oven. When frying the chicken you have to make sure the chicken is completely cooked before going to the next step. I decided to cook it in the oven until it was completely cooked and golden brown on top. Place the chicken breast in an oven dish and add a little vegetable oil, a little water, salt, and pepper.

I baked the chicken for approximately 30 minutes until the water completely evaporated.

How to steam vegetables

I love my little Ikea gadget and I use it every time I need to steam the vegetables. I chopped the broccoli and cauliflower into small bouquets and placed a little water in a pot. On top of the water, I placed the Ikea flower. I added the vegetables and then I put a lid on the pot. In approximately 10 minutes your vegetables are completely cooked and they preserve the color and flavor. Do not run them under cold water, they don’t need water in this dish.

Finally – how to prepare chicken and brown butter sauce

In a pan place the chicken and the vegetables, adding brown butter, and start the stove on medium heat. Move the chicken and the vegetables so they don’t stick to the pan. Add capers and let them cook for 3-5 minutes in the butter. Using a spoon add the butter to the chicken and vegetables, so they get all the butter flavor.

I know this is not the one-pot recipe we all love, it requires little effort but a little more work than a normal recipe. It is also well worth it since everybody loves butter sauce. Don’t try to cook them all in one pot, the result will not be what you want.

Also, if you don’t want to cook chicken you can use the same recipe and serve fish with brown butter and capers.

As for the vegetables, you could use any other vegetables that you can steam and serve steamed.

Serve the dish hot.

Ingredients

  • 80g butter
  • 2 chicken breasts
  • 2tbsp vegetable oil
  • salt
  • pepper
  • 100g brocolli
  • 100g cauliflower
  • 2tbsp capers

Instructions

  1. Take the butter and put it in a saucepan, on medium heat. It's better to choose butter with high-fat content.
  2. Cook it for 10-12 minutes, until golden brown. Cooked until brown the butter will get a nice nutty flavor. You will see that is ready when it starts to get small pieces of solids floating.
  3. In the meantime, preheat the oven to 200 degrees Celcius.
  4. Place the chicken breasts in a pot, with some vegetable oil, salt, and pepper.
  5. Bake it in the oven for 30 minutes, until golden brown.
  6. Steam the vegetables, we decided to make broccoli and cauliflower, but you can choose any other vegetable. In order to steam the broccoli and cauliflower, cut them into bite-size pieces and place them in your preferred steamer. Let them steam for 8 minutes if you like them a little crunchy, or longer if you like them soft.
  7. After the vegetables are ready, and the chicken is ready, place them in a pan and add the brown butter.
  8. Add capers and cook them together for 3-5 minutes. With a wooden spatula move them ofter, so they don't burn or stick to the pan.
  9. You can add dry thyme for flavor and serve the dish with fresh parsley.
  10. Enjoy!
